Roast Goose is a traditional dish of Guangdong, as well as the representative work of the roast food chefs. Small and medium-sized black geese from Qingyuan are preferred. With wings, feet and viscera removed, the geese are pumped and coated with five spice powder. After their bellies are sealed, the geese are scalded in hot water before cooled in cold water and seasoned in sweet water. After dried and pickled, they are roasted in ovens or on open fire.
